Bacalao Ling Cod at The Harvest Vine in Seattle, WA. I love a great fish dish, and this pan roasted ling cod was amazing. Bacalao refers to a cod that has been preserved by drying and salting and is popular in Spanish cuisine. The Ling Cod was cooked perfectly - seared on the outside to give it texture and a nice crisp, but super moist on the inside. Served on top of piperade, which is a traditional Basque accompaniment consisting of tomatoes, onions, peppers, and garlic. The Harvest Vine is a Basque restaurant serving Spanish tapas in the Madison Valley area of Seattle. I also loved their Remolochas (Beet Salad), Iberico Pork, and Foie Gras Terrine. Open daily from 5pm to 9pm. My first time at The Harvest Vine, but this will definitely be one of my go-to stops every time I’m back in Seattle.
