Whole Wolfe Ranch Quail at The Happy Crane in San Francisco, CA. I don’t find quail on too many menus, so when I see it, I’m always eager to order it. The Happy Crane’s quail comes from Wolfe Farms, one of the country’s top purveyors of quail, and it was outstanding! Using a process involving low temperature cooking, charcoal grilling, and high temperature frying, the meat was moist and tender on the inside while the skin was light and crispy on the outside. Accompanied by fresh lime, sichuan pepper salt, and pickled turnip, my only regret with this dish is that I didn’t run it back (i.e. order another one). Owned and operated by renowned chef James Yeun Leong Parry, The Happy Crane serves modern Cantonese dishes in San Francisco’s Hayes Valley neighborhood in a relaxed but vibrant environment. Terrific service by friendly and knowledgeable staff. Open dinner only Tuesday - Saturday.
